Indian Tomato And Cucumber Salad

INGREDIENTS

INSTRUCTIONS

2 large ripe tomatoes

1 large cucumber

1 small red onion

1 Tbsp. sugar

2 tsp. ground cumin

1/2 tsp. salt

  1. Cut the tomatoes into 1/2 inch chunks. Peel the cucumber, then quarter lengthwise. With a spoon, scrape out the seeds. Cut the cucumber strips cross-wise into 1/2 inch slices. Peel the red onion and cut into 1/2 inch chunks.
  2. Place the vegetables in a serving bowl. Toss to mix. Sprinkle on the sugar, cumin and salt. Stir until all of the vegetables are well seasoned. Serve at room temperature or slightly chilled.
Serve as a fresh relish or as a side salad with grilled chicken or fish.
