Broiled Honey Mustard Chicken

INGREDIENTS

8 skinless, boneless chicken breast halves (about 5 ounces each)

Freshly ground pepper

1/2 cup honey mustard

1/4 cup olive oil

1/4 cup plus 2 Tbsp. minced shallots

3 Tbsp. chopped fresh thyme leaves or 1 Tbsp. dried

  1. Preheat the broiler. Pound the chicken breasts to flatten evenly. Season with pepper.
  2. In a shallow dish, combine the mustard and oil. Whisk to mix well. Stir in the shallots and thyme. One at a time, coat the chicken breasts on both sides with the mustard mixture and place on a broiler pan.
  3. Broil about 4 inches from the heat, turning once and basting with any remaining sauce, until the chicken is golden on the outside and white but still moist in the center, 7 to 8 minutes.
Serve with rice pilaf and spinach salad
