Tex-Mex Pork

INGREDIENTS

INSTRUCTIONS

4 boneless pork chops or pieces of boneless pork loin, 3/4" thick

1 Tbsp. vegetable oil

1 cup chunk style prepared salsa

1 can (4 oz.) diced green chiles, undrained

1/4 cup grated cheddar cheese (full fat or reduced fat)

  1. In a large, non-stick skillet, heat oil over medium high heat, brown pork on both sides about 3 minutes per side. Add salsa and chiles and lower heat. Cover and simmer gently for 8 - 10 minutes.
  2. Top each piece with some cheese and recover just until cheese melts.

Serve with rice, corn and green salad.
